Hue

Hue served as the imperial capital of Vietnam's Nguyen Dynasty, the country's last ruling dynasty, from 1802 until 1945, and its walled Citadel and Imperial City, modeled in part on Beijing's Forbidden City, reflect that century and a half of centralized royal power. Concentric walls, moats, and gates organize the complex into increasingly restricted zones, with the innermost Purple Forbidden City once reserved exclusively for the emperor and his household.

That history took on a very different weight in 1968, when the Citadel became the site of some of the fiercest urban combat of the entire Vietnam War during the Tet Offensive. North Vietnamese and Viet Cong forces held the city for close to a month before a costly Allied recapture, and the fighting badly damaged many of the Citadel's centuries-old structures, some of which remain under active restoration decades later, a UNESCO World Heritage Site still being pieced back together.

Along the Perfume River outside the city, a series of elaborate royal tombs hold the remains of Nguyen Dynasty emperors, each mausoleum complex reflecting its emperor's individual taste and era. Minh Mang's tomb favors formal, symmetrical Confucian design, while Khai Dinh's, built later and incorporating European architectural elements alongside traditional Vietnamese style, reads as considerably more eclectic and ornate. Boat tours along the river connect several of these tombs into a single, unhurried day.

Hue's cuisine stands apart from both northern and southern Vietnamese cooking traditions, shaped by its former status as a royal capital where court chefs developed elaborate, often spicier dishes for the imperial household. Bun bo Hue, a spicy beef and pork noodle soup, remains the city's best-known dish, distinct enough from Hanoi's pho that food-focused visitors treat it as a genuinely separate culinary destination.

Dong Ba Market, Hue's largest traditional market, sits along the Perfume River and gives a more everyday counterpart to the formal grandeur of the Citadel and tombs, its stalls selling local specialties, fabrics, and produce to residents going about daily business rather than catering primarily to visitors.
